SafePath Soy Residue Immunoassay Kit

For the detection of Soy Protein Residues in foods, food products and related
samples.

Background Information

The SafePath Laboratories Soy Residue ELISA kit is designed to provide a
sensitive and convenient method for screening food samples for Soy protein
residues. This test works best with samples that have not been subjected to
fermentation or hydrolysis. Although the incidence of allergy to soybean
proteins is quite low in comparison with other major food proteins, the
gradually increasing consumption of soybean products makes the identification
and characterization of major soy allergens a focus of investigation.

Two soy proteins have been identified as antigenic. One of these has a
molecular weight of 21 kDa (Soybean Trypsin inhibitor) . This protein has been
found to be heat stable and so was chosen as an indicator marker for the
detection of Soy residue material in this assay.

During the first incubation, Soy Residue (Soy Trypsin Inhibitor) in the sample is
captured by antibodies attached to the wells. In the second incubation, a
peroxidase conjugated polyclonal antibody to Soybean Trypsin Inhibitor, binds
to the captured Soy material. After washings to remove unbound enzyme
conjugate, a chromogen is added which develops a blue color in the presence of
the enzyme complex and peroxide. The stop solution ends the reaction and
turns the blue color to yellow.

Samples are compared to a supplied Positive Control which has been set as a
screening level in this assay. Results may be read visually, or with a microplate
reader.
